One Pan Meals—Yes or No?

I didn’t know. So, I did the SaucyBrownGirl thing to find out. 

I got out a sheet pan, threw on some parchment paper, and preheated the oven to 350 degrees F. I gather the other ingredients. The next steps are like a meditative ritual that I have done for so many years, as has my mother, and both her parents before her. Come, follow along in those footsteps.

So, grab a mixing bowl and make your choices. Oil, Spices, Acid, and a possible Sweet component. 

Your main flavor profiles are garlic, citrus, and peppers. SBG’s Harissa Hussy contains garlic, lemon peel, and three different peppers—paprika, kashmiri chili, and guajillo peppers. Echo these notes in your marinade to add to the levels of complexity to your dish.

My marinade: 

Olive oil, SBG’s Harissa Hussy, crushed garlic, lemon juice, apple cider vinegar and a brand new Spice Blend—-so new—we haven’t named it yet! It will add that herbaceous note to take your dish to the next flavor level. Until you can get your hands on SBG’s Spice X—add your favorite herbs. Mix well. Taste.

Add salt and pepper or lemon or lime pepper. These citrus flavors will echo the lemon peel in the Harissa Hussy. Adding herbs is a counter note to the citrus and peppers. Apple cider vinegar adds a sweet note so what you have is sweet, salty, spicy, and herby. Taste your marinade. When the marinade tastes good to you—it is done.  You are ready to cook.

Ingredients:

  • Chicken Thighs (bone in/skin on—can be done with boneless and skinless but it will not be as succulent)

  • Potatoes or Sweet Potatoes

  • 1 Can (15oz) Cannellini Beans or Chickpeas 

  • The gorgeous marinade you just made

Cooking Directions:

  1. Marinate the chicken while you slice the potatoes and rinse and drain the beans. 

  2. 5-10 mins later (After you dance it out with that addictive Shaboozey song—singing and dancing are a must in my kitchen).

  3. Place chicken pieces on tray skin up. Put the potatoes around the chicken. Put the beans around the chicken and potatoes.

  4. Drizzle the rest of the marinade on top.

  5. Pop tray into the oven for 35-45 minutes depending on your oven temperature. I use convection roast and 38 minutes and the results are delicious!


I didn’t know.

Now I do. Those beans, that crispy chicken skin, and those herby citrusy potatoes. Soooo delicious!
