SBG’s Quick Chicken Soup Recipe

Ingredients:

  • 1 rotisserie chicken, shredded (bones for broth)

  • 1 onion (diced)

  • 2 carrots (sliced)

  • 2 celery stalks (sliced)

  • 3 garlic cloves (minced)

  • 3 cups chicken broth

  • 1 tsp dried thyme

  • 1 tsp dried parsley

  • 1 bay leaf

  • Salt and pepper to taste

Instructions:

  1. Heat broth over medium heat, adding chicken bones, onion, carrots, and celery.

  2. Stir in garlic, thyme, and bay leaf. Simmer on low for as long as possible, seasoning with salt and pepper.

  3. Strain after simmering, return broth to the pot and add shredded chicken. Add noodles, potatoes, rice, or frozen vegetables as desired.
